Tomato-Cucumber Salad

Mint
is one of the "bitter herbs" in Exodus and Numbers,
says "Divine Health," but it makes an excellent addition
to salads. Parsley is a good source of vitamins A and C, and some
studies show it can help fight allergies.
Serves

Ingredients
4 Tomatoes (thinly sliced)
1 Cucumber (peeled and thinly sliced)
1/2 cup Sliced Black Olives
1/3 cup Finely Chopped Sweet Onion
1 cup Sliced Celery
1/4 cup Chopped Mint
3 tbls. Chopped Parsley
2 Garlic Cloves (minced)
2 tbls. Extra-Virgin Olive Oil
2 tabls. Balsamic Vinegar
TT Sea Salt and Freshly Ground Pepper
Directions:
Place tomatoes and cucumbers in a large bowl. Add the olives,
onions, celery, mint and parsley. Toss to combine. Combine the
garlic, olive oil, vinegar, salt, and pepper in a small bowl and
whisk well. Add the vinegar mixture to the tomato mixture and
toss lightly.
